Avo-Toast: 3 Ways

I love avocados… and I love carbs. Combining the two has honestly been the best discovery of my young adulthood. Here are 3 ways to spruce up your ordinary Avocado Toast to bring it to the next level.

Start by smashing 1/2 of a ripe avocado onto each of 3 slices of toasted bread (I used sprouted wheat berry bread from Trader Joe’s). Top with salt and garlic pepper, then add the following delicious combinations:

  1.  Sliced tomato, ribbons of fresh basil, and chopped raw red onion — A classic, bruschetta-esque taste. Drizzle with balsamic vinegar to really amp this up (I thought about doing that only after I had devoured the whole thing)
  2. Thinly sliced raw radishes and fresh thyme — This blends a slight peppery crunch from the radishes with the bright, lemony flavor of fresh thyme. A perfect, refreshing combination
  3. Chopped raw red onion and roasted pumpkin seeds — A crisp bite from the onions and an earthy crunch from the pumpkin seeds… This one may have been my favorite
